This weeks recipe is a quick and simple recipe which can be made in less than 30 mins and from the amazing All The Healthy Things.
The star ingredients in this recipe are salmon and rice which are safe to eat for those on dialysis:
Salmon is loaded with omega-3 fatty acids that help decrease chronic inflammation and protect against heart disease and cancer. In addition, salmon is low in saturated fat and is an excellent source of protein with all the essential amino acids needed for the body to work and maintain muscles.

White rice is by far the most popular rice because it's more tender than brown or wild rice, and the subtle flavour complements other ingredients in a dish.
Most people in the early stages of chronic kidney disease (CKD) don't have problems with mineral balance, and can include all types of rice. For people who are limiting phosphorus and potassium in their diet, white or wild rice is recommended over brown rice, because brown rice is rich in these minerals. However, brown rice can be eaten on a dialysis diet with attention to portion, and balanced with other foods to avoid an excessive intake of potassium or phosphorus.

Ingredients
1 tbsp avocado or coconut oil
2 – 4 oz pieces of salmon
½ tsp chipotle powder
½ tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
½ tsp paprika
½ tsp chili powder
¼ tsp cumin
¾ tsp salt
Rice, for serving
Romaine, for serving
Salsa, for serving
Pickled onions, for serving
Method
Combine all of the spices, minus the salt, in a small bowl. Pat the salmon skin dry with a paper towel and then sprinkle the salmon skin with salt.
Heat a skillet over medium-high heat. Once the skillet is hot, add the avocado or coconut oil. Next place the salmon pieces in the skillet, skin side down. While the salmon is cooking, sprinkle the spice mixture evenly over both pieces of fish. You can also sprinkle a little extra salt on top as well.
Cook the salmon skin side down for roughly 5-6 minutes, then flip and let the salmon finish cooking for 3-4 minutes depending on thickness. Remove the fish from the skillet and transfer to a plate.
Assemble your burrito bowls. Start with greens and rice, then add the toppings and salmon. Enjoy!
